The FIXX

It's Friday, y'all, and boy am I ready for this week to be over. Since I've been home from Denver, it's been one thing after another. I feel like I've been run through a shredder or something. I mean, what the heck, life? I'd like to assume that everything that's happening is teaching me something. I hope so, because I'm tired and putting a lot of effort into this thing we call living. Maybe there's a reprieve in the future. If not, I'll manage. It would just be great if I could go dancing or something, cut loose a bit. Remember, I'm having a human experience. I don't know... we'll see what happens.

There is a lot of different types of music this week. I’m really feel in some Tove Lo and Taylor Swift just saying….

I am not sure what everyone else does these days to find information and knowledge. I read everything I can, constantly. I have a stack of books that I read every week, a list of bookmarked websites and blogs, and I am a New York Times junkie (I just love the writing). Another thing I do to follow the news is read and research trends. I don't do it every day, but at least once a week. I would love to tell you that the American people are interested in really cool, deep subjects, but not so much. Ha ha! As usual, it's about relationship status and drama, Powerball, prominent deaths, and the ever-loving American Horror Story. The news is that Kim Kardashian will be on it this season... oh yay (sarcasm).

Like I said, I read everything I can get my hands on, and one of the stories sparked my interest. Probably because one of the goals I have is to write a cookbook that features content of a certain nature, not so much trashy talk about my exes. I say that because the new "Wicked" movie (Part 1) that is to be released in November of 2024 has cultivated a new romance... a romance that is budding. This is only important to me because it is one of the hardest girl crushes I had to get over, Ariana Grande, who just broke it off with her ex-husband after two years. (I was married for only 2 years too, I thought I was the only one, guess not.) She now has a new beau. I like this one better than the other, but only because he starred as SpongeBob in the Broadway of SpongeBob. (This is another guilty pleasure, y'all.) It made me think of a recipe I made for an acquaintance that I had breakfast and coffee with one fine morning. It is Strawberry Vanilla Pancakes. It's unbelievable how a little bit of vanilla can change the pancake game

RECIPE

Strawberry Vanilla Pancakes

Ready in 30 minutes (15 prep/15 cook)

Serves 8 people

Ingredients

1 cup all-purpose flour

2 Tbsp. brown sugar

2 tsp. baking powder

1 tsp. salt

1 cup milk

2 Tbsp. vegetable oil

1 egg

2 tsp. vanilla extract

1 cup chopped fresh strawberries

maple syrup (or) jam

Garnishing fresh strawberries

Preparation

  1. In a medium size bowl stir together, the flour, brown sugar, baking powder and salt.

  2. Pour in the milk, vegetable oil, egg, vanilla extract, and mix until well blended.

  3. Stir in the 1 cup of fresh chopped strawberries.

  4. Coat a large skillet or griddle, with butter or cooking spray. Then heat skillet or griddle over medium heat.adipiscing elit, sed dolore eiusmod tempor.

  5. Pour batter into desired size of pancakes, onto skillet or griddle. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side.

  6. Top pancakes with either maple syrup, or jam, or fresh strawberries and Reddi Wip (or Cool Whip). I ate like mine with fresh strawberries and Reddi Wip.

TipsStrawberry and Vanilla Pancakes

These pancakes are made with fresh strawberries and pure vanilla extract. I found the recipe on two different recipe websites - Allrecipes and Tasty Kitchen. They tasted great with maple syrup, but even better with fresh strawberries and Reddi Wip Whipped Topping!

In other news, I'm looking forward to the new season of American Horror Story, even though it has Kim Kardashian in it. One of my closest guy friends loves Kim Kardashian, and it kind of broke my heart. Anyway, I'm planning to have a relaxing weekend. I'm celebrating my uncle's birthday, so that should be pretty fun. I love spending time with my family. I think I'll just chill and start working on an art project that I need to finish by August 9th. As always, thank you for reading.
